Tomato soup with Grilled Cheese sandwich

I think this dish was fit for Aditi's ear infection, a wheezing cough and slight fever. It was light and nutritious, not to mention, a perfect potion for my husband's cough on a cold, rainy evening.





To try it out, you will need:
4 roma tomatoes
Half a medium onion
1 clove garlic
1 tablespoon butter
1/2 teaspoon dried oregano

Do this:
1. Take a big pot and boil water. Meanwhile, cut a cross on both the ends of the tomatoes.
2. Add the tomatoes to the boiling water and let it boil for 5-7 minutes until a knife goes in easily. The crosses in the tomatoes will help peel the tomatoes quickly, once boiled. Peel and set aside. Keep some of the boiling water and set aside.
3. Melt butter and add coarsely chopped onion and garlic. Fry till onions get translucent.
4. Put the onions and tomatoes in a blender and puree.
5. Add the pureed mixture back to the pot. Add the saved water to get a consistency of your liking.
6. Add salt, pepper and oregano and heat the soup through.

For the grilled cheese sandwiches:
Heat a frying pan. Put a slice of Kraft light cheddar cheese in between 2 slices of toasted and lightly buttered wheat bread. Heat the sandwich on medium heat until crispy and golden brown. Cut in triangles and serve with soup. (I cut the sides off too for Aditi :))
